jmc's classics
A tenor can be an operatic voice or as the dictionary defines it "the course or thought or meaning that runs through something written or spoken.
Italy has produced many fine tenors. Among them Enrico Caruso and Luciano Pavarotti. both have pasta sauces named for them. Caruso's sauce was invented in Uruguay. It is a cream base but has beef bouillon in it which gives it a gravy like quality. It contains ham and mushrooms. The Pavarotti sauce is a tomato base with red pepper, parsley and anchovies. It sounds similar to Pasta Putenesca. Stereotypes Italians. I wonder what a pasta sauce named for John McCormack or Jussi Bjorling would consist of.
